What is a chimney cake?

A chimney cake: enriched dough wrapped in a spiral around a spit, fire-baked until the sugar caramelises, served burning hot with a hollow, steaming core.

Four moves, one spiral

A chimney cake does not come out of a display case. It unrolls in front of you, from dough ribbon to the first burning-hot bite.

  1. The dough

    An enriched brioche dough, stretched into a long supple ribbon. Nothing frozen, nothing made the day before.

  2. The wrap

    The ribbon winds in a tight spiral around the wooden spit. That is what gives the cake its hollow heart.

  3. The fire

    The spit turns over the embers. Sugar melts, caramelises and crackles while the inside stays soft. Four to six minutes, not one more.

  4. The filling

    Still hot, it is rolled in the topping of your choice, then filled if you want to go further: cream, pistachio, speculoos, ice cream.

A true story, not a legend

The kürtőskalács was born centuries ago in the valleys of Transylvania, in Central Europe. A celebration cake, spit-baked over embers for weddings and fairs, it went on to conquer the streets of Budapest and Prague.

KURNET is not inventing a family legend for you. We tasted this cake, learned the craft, and brought it to Casablanca, adapted to our tastes: our toppings, our fillings, our own nights. The name comes from there: the kürtős spiral, pronounced the way we do here.

How to eat it

You unroll it. The spiral peels off in a warm ribbon, crackling on the sugar side, soft on the crumb side. Alone or shared, walking the Corniche or sitting by the sea. Filled, eat it with a spoon before the ice cream wins.

The questions we get

How sweet is it?
The cinnamon sugar base is gentle, not cloying. Fillings climb from there: you choose how far to go.
What is in the dough?
Wheat flour, fresh eggs, butter, whole milk, sugar and yeast. Fillings, toppings and their allergens are listed one by one on our ingredients page.
Can you share one?
The classic unrolls beautifully between two people. For a group, the six-mini sharing box exists exactly for that.
Why does it take a few minutes?
Because every spiral bakes to order, four to six minutes over the embers. That is the show and that is the freshness: they come together.
Anything smaller or less sweet?
The minis in the sharing box are shorter, and the sesame or walnut toppings stay low on sugar. Cold drinks do the rest.
